As Dave said it is entirely dependant on the type of wood. That sold as "Bogwood", the heavily knarled dark reddish-brown stuff is heavier than water and sinks immedeatly. It does usually cause tannin staining of the water for weeks or months. " Mopani" wood from Africa, the more branch-like stuff sold in aquaria/vivaria/pet shops is pretty dense, but I think that is a bit floaty. I've never bought any myself. The roots that I collect and which are described in "Roots" below this post are lightweight and generally take about 45 days to become waterlogged.
