I was fortunate enough to hear Karen Randall (she is a well-known aquatic plants expert & contributor to AFM & Aquatic Frontiers magazines) speak at our local aq. society meeting recently & she recommended keeping plants in pots under many circumstances. She also showed several slides with tanks which had all or many plants in pots. It still looked sharp, in some you didnt even notice the pots.

She didnt mention it for loaches, but it sounds like it's worth trying. If you were keeping some plants in pots, maybe you could use a larger diameter gravel on top, just in the pot, to discourage burrowing loach noses. (Or something else less pleasing to them.)
