Salt is an essential component in cell osmosis. It could be that the salt in the water helps keep the osmotic balence - the same way humans will croak it if we get too little salt in our diets (so remember, when you get caught out in the desert always pack K-Mart salt tablets!) So too little and no osmosis takes place and vice versa. Even in fresh water there is a little salt, so keeping fresh water fish in a saline free condition is probably not very good for them. I suppose there are Marine biology textx that give the ideal salt concentrations, but If I start on this I'll get even more obsessed whith my fish and my wife WILL divorce me....
