Safest way to change water/vac when they are "friendly"

I guess a year ago I would never have dreamed I'd be asking a question like this...

How the heck do you "safely" change water and vac when the fish & fishettes are friendly & overly curious but no longer afraid?

I have been attacked by Red (dwarf gourami while he was defending his fry/nest) but for the most part have had to uncover both botia, platy and turn the tube off to release a curious dwarf gourami or a neon...or jumped out of my skin while watching out for the vac end and the "kids" nibbled my wrist...or felt the whoosh of a clown hovering...
