How many is enough??

Greetings,

After loosing my last batch of Loaches to Ich (a LONG story and an earlier posting), I'm ready to try again. I just got my tank balanced as well after my Bio filter died in the ich treatment. I'm nervous about adding too many at a time and throwing things off, BUT I also know that these little guys like crowds. Can you start with just 2 and add, or should you start w/ 3,,,?? I have a 55 gallon tank with 10 fish. (2 Kissing Gouramis, 2 Pearl Gouramis, 5 Chinese Algae Eaters, and 1 Sailfin Pleco)

I REALLY want to do this right this time and make the Loaches the center piece of my tank... Any suggestions would be great...
