Adjusting pH

One of the first things I learned at this forum was to leave my pH alone. That the fish will get used to whatever it is so long as it's consistent. So I stopped using pH Down. I leave it at 7.6 or maybe 7.8 (my tap is 7.4).

But at my LFS an interesting point came up. They keep theirs at 7.0 because some of their fish require it. So when I bring a fish home, it will be a big change.

Is slowly adding tank water into the bag over half an hour enough of a gradual change? Or do I need to use pH down in my QT to get it to 7.0 and then slowly let the pH rise during quarantine?
