Substrate for Loaches

I have been planning a Discus tank. Most Discus breeders recommend no substrate / bare bottom for cleanliness and water quality. This has got me thinking if a bare bottom tank helps the water quality and health of a Discus tank why wouldn't it be best for my loach tanks?
Will the lack of substrate have a negative effect on the loaches? Do loaches need gravel, sand, etc to poke around in search of food? Is the increase in water quality worth removing all my gravel?
From what I can tell substrate has three purposes: a place for plants to root and absorb nutrients, provides some biological filtration and has visual appeal. So if I do not have plants (or pot them) and I use a large effective biol
