Another Newbie Question

My loaches don't seem to eat directly when I give them food. They come out later and I can see them digging around in the gravel for a long time (1/2 hour or more), but I never see them eating the food directly. I've tried sinking pellets, shrimp pellets, brine shrimp, tubifex, freeze-dried bloodworms, and zucchini. Is this just how they prefer to eat, or is there something else I can be doing. I've only ever owned top feeders before, and so I'm not sure what to expect.
