Keeping Fish that Hide

Well, I expect I'll get blasted with lots of "you just don't get it" responses, and they'll probably be right, but here goes anyway.

Can someone explain to me the appeal of keeping fish that never come out? I'm thinking of the ones like (I think) horsies and kuhlies, that hide all the time. What's the point, if you can never observe them? Or do they not really hide /all/ the time?
